Looking down on this happy valley is a cluster of apricot-hued limestone buildings. Rooms – sleek and contemporary, mixing dressed stone with rag-rolled walls – are in the apex of the old barn; each has its own terrace fragrant with lavender and wisteria. Walk over wobbly stone to the shabby chic salon and dining room, where breakfast is served on English bone china. For dinner, Monique plunders her garden to produce regional specialities.
