The Experience

The dynamic Bories sisters have taken over the old family winery – behind its long wall in the big Corbières village of Fabrezan – and transformed it into characterful holiday apartments. Furnishings are a mix of old, new, and cleverly up-cycled: ancestral portraits and antiques rub shoulders with modern pine tables, vintage metal bistro chairs and reclaimed timber shelving; 1940s radios and old wine cases have become bedside tables. Original design makes the most of light and space, beams and fireplaces. Kitchens and bathrooms are neat and practical with new fittings and pleasingly quirky touches. Guests share the garden behind the largest building where there’s a veg patch, swings, slides and a swimming pool surrounded by young mulberry trees and a weeping willow Each apartment has its own terrace and barbecue; one is entirely ground floor and properly adapted for wheelchair users. The area’s great for walking, for cycling and for wine-tasting of course – busy at harvest time. The family’s growing operations are now at the nearby Château Ollieux Romanis. And the sisters also run a good shop/tearoom/art gallery.

We only stayed three nights but wished we'd stayed three weeks! Aude and Florence were super helpful and the apartment was spacious, clean and had everything we needed. The pool was lovely and the delicious (and very generous) breakfast was an added bonus. Will definitely be coming back!

We spent 2 weeks at Paul Huc and had one of the loveliest holidays we have had in a long time. The high standard of the apartments, the friendliness of Aude and Florence and the prettiness of the Domaine itself were complemented by Fabrezan itself which is a the type of French village you think no longer exists. It has 3 very good restaurants and a great bar all within walking distance and whilst there is no longer a boulangerie, there is a small Vival selling most things and a Tabac which also sells bread. The Domaine shop is also great for wine. A real find. We will definitely go back.

Aude and Florence greet you with a warm smile when you arrive at their beautiful premises. They are always there to guide you in the locality and recommend places to visit and eat. The property is very tastefully decorated and it’s a growing project but can it get anymore beautiful that what they have already achieved. The place is immaculately kept from rooms to pool to boutique ( we loved the porridge and coffee there in the morning). Fabrezan has some lovely restaurants and if Aude and Florence book for you I think you get a little extra attention! We’d recommend this to anyone.
