Camon... the name carries images of pious folk, wrapped in sackcloth and arriving by donkey. Art history buffs will swoon trying to find which bits were built when, but it was first recorded as a Benedictine Abbey in 928. Now Peter, who managed luxurious Samling Hotel in Cumbria, and his wife Katie, an interior designer and young mother, run the place hands-on like a B&B (though breakfast is extra). They give you monks' bedrooms with vaulted ceilings, tiny glistening floor tiles and tall 28-pane windows looking south to the hills; rooms on the second floor are squarer; all have soft colours, lovely fabrics, spoiling bathrooms. Relax in the huge salon with its exquisite 18th-century plasterwork and floral ceiling, or take tea in the sheltered cloister garden. Breakfast is served, most elegantly, on a long high terrace running the length of the château and overlooking formal gardens with lawns, mature trees and swimming pool. The refined menu dégustation is a memorable dining experience, the wine list is superb and you are in the heart of Cathar country, near the medieval delights of Mirepoix.

"We had a wonderful few days at L'Abbaye Chateau de Camon. The chateau is a magnificent, atmospheric but also friendly place to stay. The rooms are all individually decorated to a high standard. The terrace is a perfect place for breakfast, afternoon tea or drinks in the evening. Katie, Peter and their staff looked after us very well and made us feel completely at home. We dined there on three evenings and both thought it was the best food we had ever eaten. "

"The abbey is one of the most beautiful places we have ever stayed. The veiw out our window was outstanding. The meal we had at the resturant was one of the top 5 we've ever eaten. The staff was friendly. But the abbey itself is incredible. Built in the 1400's and kept largely original, it is like going back in time. Yet the bathrooms are updated an modern, so you have the best of all possible worlds. This place is worth going out of your way to stay at! Its a steal of a deal too!"
