On an ancient road between Canossa and Carpineti, this 17th-century travellers' lodge sits in the silent hamlet of Valferrara. Weary merchants would rest their heads in peace – and absorb the calm and protection of the surrounding forested hills and distant castle of Carpineti. Ruined when Giuliano and Cosetta discovered it in 1994, the casa di scale ('tiered house'), complete with flat-roofed Emilian tower – where a clutch of apartments are almost ready – has been completely and masterfully restored with local materials, and parquet flooring fashioned from recycled beams of oak. Cosetta restores local antique furniture and the house is full of it; crisp cotton envelops large, beautifully framed beds and an eye-catching walnut writing desk stands elegantly near one of her several finely polished wardrobes. Expect a warm welcome and a delicious breakfast – under the cool portico, in the walled garden or in the dining room: a fabulous conversion of the old stables. Fresh parmesan can be sampled locally and smiling Cosetta, also a great cook, provides dinner on request.

"We thoroughly wjoyed our 6 night stay. The most wonderful room, such attention to detail, spotlessly clean, lovely decor. The breakfasts are the best we have ever had, home cooked specialties made daily by Cosetta, each better than the last. The hosts are friendly, welcoming but never intrusive. They made every effort to provide advice when we asked for it, made recommendations for restaurants and places to visit. The area is an undiscovered gem, few tourists, some great food, and very reasonable priced. We will return, it's definitely worth a visit."

"We stayed here as part of our honeymoon and it was wonderful. We received a warm welcome from Cosetta and Giuliano and were treated to some homemade refreshment. We were delighted with the room- the whole house has been beautifully done. Though in peaceful countryside we found Valferrara easily, it is set amidst breathtaking scenery. Happy memories of breakfasting outside with the lush hills surrounding us and the food was just delicious. It gave us a great base for days out to nearby towns but also for relaxing. Would highly recommend a stay and hope to return ourselves someday."

"1066, as we all know, William the Conqueror turns up and takes over in England. 11 years later, Heinrich IV turns up at Canossa Castle, and stands around in the snow for three days in order to ingratiate himself with Pope Gregory VII, safely tucked up inside the castle, a guest of Matilda of Tuscany, la Gran Contessa. 934 years later, my wife and I turn up at Pantano, a stone's throw from Canossa, having driven through the same beautiful Apennine mountains. No sign of Heinrich. And no Pope neither but there to greet us is la Gran Cosetta, the most engaging hostess in her warm and inviting haven of a home. Recommendissimo."

"What an absolute treasure! Having arrived somewhat weary from a long journey, Cosetta and her aunt proved the most delightful, warm company as we shared a bottle of prosecco and nibbled on hunks of parmesan, trading stories about gastronomy and gardening. After a restful night in our immaculate bedrooms, the sheer beauty of the surrounding coutryside became apparent - as did the cooking talents of Cosetta with a breakfast to rival any. Our only regret was that we were away after just one night's stay."

"The building and the surrounding gardens of Valferrara are beautiful and the views across the valley are superb. We loved sitting in the shade of the barn terrace on a sunny afternoon. Cosetta has restored the house beautifully. Our bedroom and bathroom were really comfortable and we slept well. Most important was the warm welcome by Cosetta, with her good sense of humour and her patience with our basic Italian. The breakfasts were delicious: fresh fruit salad, freshly baked local savoury dishes and breads, home-made marmallate. We’ll certainly be returning."
