A Michelin star waits at this lovely restaurant with rooms in the Wye Valley - stylish rooms are nicely priced, Tintern Abbey is close

Chris and Kirsty came west to do their own thing, refurbishing this popular restaurant with rooms in great style, then winning a Michelin star – all in their first year. It's quite some feat, but no surprise. Chris has a culinary pedigree few can match, including five years with Raymond Blanc at Le Manoir aux Quat'Saisons. As for the house, it sits in a tiny village that's wrapped up in the Wye Valley. Forest rises all around, bluebells carpet the woods in spring, deer amble by in summer. Outside, there's a terrace for lunch in good weather. Inside, a cool, uncluttered elegance runs throughout, a great spot to treat yourself to Chris’s ambrosial food. Much is foraged – hogweed, nettles, wild chervil, bitter cress – while most is local with lamb from the valley and beef from Ross. You can eat à la carte or splash out on a seven-course tasting menu, perhaps squab pigeon with rhubarb, Cornish turbot with ground elder, caramelised white chocolate with pink grapefruit. Lovely rooms have colour and style, woollen throws, good beds and fancy bathrooms. Tintern Abbey on the river Wye is close.
