Welcome to la vieille France and a sleepy southern village. Two steps from the church, opening its arms to the main square, is an 18th-century cottage, beautifully renovated. Step straight into the kitchen, a lovely space to cook in, with new tiled floors and elegant timber-frame walls, fresh in white – and you can tell the owner's a chef: there are proper chef's knives. The downstairs bedroom, with its own secret courtyard, is a sweet oasis for two. Upstairs a light, inviting living room has a chic leather sofa, books, games, DVDs, and a sunny terrace with field views so you can toast your good fortune to the sound of cow bells. Two lovely bedrooms on the next floor (a double and a twin) have antique furniture and crisp linen; the pretty bathroom (below) has a super roll top tub; all is light and inviting. On the Languedocian-Pyrenean border, the walking and cycling are wonderful, while Lac Montbel has turquoise waters and sandy beaches. There's a weekly market in Mirepoix (one of the best) and you can eat out in Chalabre, but Nic and Carolyn do B&B next door with great dinners – don't miss a four-course treat.

  • Enjoy dinner on the candlelit terrace to the sound of cowbells, or on the square in the shadow of the lovely old church - and know this is why you came to this beautiful, unspoilt corner of southern France.
  • Beautiful, medieval Mirepoix, a few minutes drive, hosts the best farmer's market in the region every Monday. Fill your picnic basket with fresh, local produce and head for the lake.
  • The wild swimming is a treat, the turquoise blue waters of Lac Montbel, Puivert lake in the shadow of the medieval Cathar chateau; Carcassonne Plage makes a great alternative to the coast.
  • Explore the cobbled streets of the walled city of Carcassonne, enjoy some boutique shopping then find a shady spot for a long, lazy lunch in one of the many pavement cafes.
  • Walk or cycle from your door through wild flower meadows, hills and forests., vineyards and fields of sunflowers - this is Languedoc.
  • Go way back in time, see the prehistoric cave paintings at Niaux, explore ruined Cathar chateaux on rocky outcrops, the kids can learn to make fire and use a bow and arrow at the prehistoric park, Tarascon.

"Carolyn and Nick have made a wonderful place to stay. The cottage is very comfortable and beautifully furnished. We dinned twice chez Nick and both times it was great. We will certainly be visiting again. The location is perfect to explore the Midi and Languedoc regions of France. "

"We had such a great stay with Carolyn and Nick who are lovely hosts. The gite was stylish, fresh and clean with great views, especially over the charming square and it's church. The area offers so much more than we could fit into our five day stay, the children loved the nearby swimming lake at Puivert and the Monday market at Mirepoix is a must. Also a must is enjoying dinner and wine, supplied by Nick and Carolyn, in the warm peace of the square. "

"What a wonderful peaceful holiday we have had at Chez Maison Bleue and can not wait to return. The scenery was breathtaking - especially taking in the views from the top of a climb on road bikes! The gite was homely and welcoming with those added extras to make our stay special. Carolyn and Nick were exceptional hosts who would go the extra mile with nothing being too much trouble. We learnt about the history of the region in the evenings and on occasions got to practice our French. Nick's Chef skills were fabulous and the food exquisite. I would highly recommend a stay."

"We have just had a truly wonderful 12 night stay at Chez Maison Bleue. Carolyn and Nick's hospitality was second to none. We were absolutely spoiled rotten during our stay. We have never ever been so well looked after in our 40 years of travelling. The accommodation, the ambience and the location was superb and Nick's cooking was 'to die for'! Nick said to us one evening that they would like to think that their visitors would arrive as 'guests' and leave as 'friends', well, all I can say is that they must have 'bucket-loads' of friends! Give Chez Maison Bleue a go,you will NOT be disappointed"

"Go out of your way to stay here. Our 3rd visit to Chez Maison Bleue, the house is in an idyllic setting on the tiny village square, stylish & comfy, we just love it. Dinner at the B&B is a treat after a day in the hills or by the lake. Peace and tranquillity, farmers' markets, medieval towns & villages, vineyards, Cathar chateaux, and this time we ventured further to the Dali museum in northern Spain. An easy drive from Toulouse & Carcassonne, we will be going again. "

"Stayed in the gite for two nights mid May, and having visited Chez Maison Bleue two years ago, I couldn't wait to return. We had fantastic evening meals and breakfasts and as usual Carolyn and Nick were perfect hosts. This is a fabulous place to go if you want to get away from the hustle and bustle of daily life and enter a world of calm and peace. It's like going back in time. Wonderful walks and cycling and great value for money. Can't recommend it more! And can't wait to return."

"We stayed in both the bed and breakfast as well as the self catering gite with our 3 year old and 3 month old baby. Both experiences were fantastic. Nick and Carolyn were perfect hosts providing a truly personalised stay. The food was amazing and the advice on what to do and see was spot on. I would recommend this place to anyone with young kids."

"We had a wonderful holiday in June. Carolyn and Nick were welcoming, friendly and helpful and we loved, the house, the square, the local fizz, the meal Nick cooked for us on arrival, croissants and other goodies from Chalabre and Mirepoix, thoughtful toys for our grandson, comfortable beds, views from the balcony, the church bell, cowbells, cave paintings, Carcassonne, quiet roads, beautiful countryside, vineyards, Cathar history, eggs from the chickens, local apple juice, roses round the doors in Camon and much more. We loved it so much that we're going again in Sept and can hardly wait!"

"We spent a truly relaxing 2 weeks in the gite which is well appointed and comfortable with a good supply of books and D V Ds.The view of the hills and the sound of the cow bells is so quintessentially rural France. It was wonderful to feel part of French life, shopping in local markets, all of which where within a short drive. The boulangerie in Chalabre is magnificent. The locals are so friendly, especially those living in Sonnac itself. We sat out at the front of the gite at every opportunity enjoying sunshine, wine and peace. Nick and Carolyn are exceptional hosts who are always available"

"Maison Bleue is the perfect place to take time out. Well equipped and attractively furnished, it is in a very rural peaceful village. The terrace overlooking the hills, where cow bells were a constant background, was a superb place to relax in the sun. Walks from the house meant you didn't have to use the car every day. Carolyn and Nick were thoughtful hosts with lots of local knowledge which they were happy to share. A place to return to."

" What a find, this gorgeous house on the village square is quintessential rural France. The standard of accommodation is outstanding, all newly restored. We loved our bedroom at the top of the house with its huge antique French bed and enjoyed all our meals alfresco on the sunny terrace. We walked from the house and picked herbs from the hedgerows for dinner, shopped at the market in Mirepoix, and had a great day out exploring the medieval ramparts of Carcassonne. The owners are very knowledgeable about the region and offered us advice on walking and cycling routes and lent us their mountain b"

"A lovingly restored and thoroughly recommended property in the quiet little village of Sonnac, less than an hour from Carcassonne. Much thought and consideration has gone into the house restoration ... and it shows. It has a beautiful, contemporary feel that perfectly complements its setting next to the church in the old village square. Sonnac is quiet but nearby villages and towns such as Chalabre (a short walk or bike ride away) and Mirepoix (lovely medieval centre and a cracking market) offer much interest. A great base for exploring the beautiful countryside in this part of France."

"Just returned home having spent an amazing week in the cottage at Maison Bleue hosted by Carolyn and Nick. So adored the character of the building and also the quaint village setting. All the lovely touches in the bathroom and kitchen not to mention the welcome pack. Our hosts were attentive and helpful and breakfast on the terrace was a real treat and so was Nick's cooking. We enjoyed the flexibility of being able to cater or not. Maison Bleue is well positioned for exploring the region with its intriguing Cathar history. All in all a very happy experience which we would very much like to re"

"We had a great evening at Chez Maison Bleue in May 2012. The setting is fantastic, in the foothills of the Pyrenees at Sonnac-sur-l'Hers. The house (and the gite next door) lovingly renovated by Carolyn & Nick is right in the middle of this idyllic French village. The very French surroundings are matched only by the quality of Nick's cooking! Whilst we spent a lazy time chatting & drinking the local wine, there is easy access to swimming (in the local lake), walking, cycling and horse riding. Just the sort of place to recharge your batteries, good value & less than an hour from Carcassone."

"Beautifully quiet and relaxing. Lovely countryside but within easy reach of the lively market at Mirepoix. Excellent for walking, cycling or just sitting on the terrace. Nick and Carolyn are great hosts and he is an excellent cook using local ingredients which always taste better when eaten "al fresco"."
