The Experience
This light-filled space feels wonderfully private, with pretty arched windows and a modern addition at the back for a dining room with views. All you’ll hear is birdsong and in summer you can light the barbecue and sit back to enjoy the views. If the weather isn’t clement you can hunker down with a smart TV or the radio.
The big kitchen has sparkling marble-topped counters and plenty of prepping space – you’re left a beautiful welcome hamper of home-baked bread, local eggs and milk. Your bedroom and bathroom are super. At 2pm on Thursdays between March and October those interested in horticulture can take a tour starting at Mount Congreve House; the gardens are magnificent.
If you’d prefer not to cook The Stable Café is open for breakfasts and lunches – delicious seasonal and homegrown produce rustled up by head chef Jean Baptiste Dubois. Walks and cycles will be lovely through the gentle Waterford countryside.

Location
The neighbourhood
Garden lovers will be very happy here and hikers will head for the Waterford Greenway, 29 miles of joyous countryside which you can also cycle – bikes can be hired in Waterford. Here you'll find a plethora of decent restaurants and shops, as well as the pretty harbour. Visit the medieval museum, take a picnic to Tramore beach and tuck into a Blaa – a soft white roll usually filled with bacon.
