The Experience

Sign the blackboard if you’re staying for dinner – and why wouldn’t you when the menu is so tantalising? Everything here is produced locally or on the farm (including Mama’s plum jam); Paolo’s enthusiasm for his venture is intoxicating. He once used to nip between Italy and London with a precious cargo of truffles for top chefs. Since then he’s been busy restoring his grandparents’ old farm and creating this rustic haven. Find traditional interiors, stepped vine-clad terraces, nesting boxes for birds and a beautiful oval pool. Bedrooms are warm and cosy with beamed ceilings, beds are in keeping with the country style and there’s rosy brick flooring throughout. Image a day spent lolling by the pool or in a hammock by the stream as the children make friends with the donkeys, rabbits, hens… and two truffle-hunting hounds! Mushrooms from the garden, truffles from the hills, homemade tagliatelle, biscotti and sweet wine… such bounty is served at long rustic tables under the vine-covered terrace or by the wood fire. If you can tear yourself away, the Sibillini mountains and the Adriatic are close. Slow heaven.

Just left Ramuse after a wonderful - far too short - visit. It is a beautiful, tranquil place set in the hills. We were very well looked after by Paulo, who prides himself in using local produce when cooking yummy, simple Italian dinners for his guests. A real treasure. We will certainly be coming back.

A cat, dog, donkey, chickens and a very friendly owner Paolo made us feel very welcome at Ramuse. A beautiful house on a very well looked after estate. Paolo cooked delicious meals - also vegetarian - almost everything that comes on the table is either home-made or locally produced. We will certainly come back!

We have just enjoyed the most brilliant week with Paolo. It is rare to encounter such a natural host: Paolo is one of the greats. We arrived a bit frazzled from a hot drive and immediately Paolo was introducing our daughter to Melissa the donkey: instantly charmed! The rooms are simply elegant, comfortable and spotless. Breakfast and dinner are on the terrace with the other wonderful guests. I'm not easily impressed but Paolo's cooking is terrific: he has a very sure and light touch. In short, he completely spoils you! We will be back next year.

We stay at Ramusè one week, we found everything really at the top. Paul is extremely friendly and helpful, makes sure that guests no longer have to think about anything except relax and enjoy the holiday, helped by the lovely mother, Anna and her daughter. The cuisine is local and seasonal ,light,refined and tasty, based on genuine products,accompanied by excellent local wines. Even the cats and the little dog Trilly are a pleasant and discreet companionship, as well as other guests. Rooms are comfortable and clean, beautiful the swimming pool. We really recommend Ramusè and we will be back !

We had the most wonderful stay at Ramuse. Paolo is a fantastic host and could not have done more to make us feel at home. He was lovely to our 18 month old daughter and she just loved being surrounded by chickens, cats and Trilly the sweet spaniel. Paolo's cooking was honestly some of the best we have tried, straight and simple but lovingly made with the freshest of ingredients. The simple pasta with tomato sauce and olive oil and the chocolate and pear pudding were a true delight We will return for sure; go stay here, you will not be disappointed!
