The pace of change is exhilarating - or nerve-wracking. Gone is the grim, old-fashioned B&B landlady. Gone are the stained linoleum and chipped formica. Familiar now are the linen sheets and polished wooden floors, the croissants and decent coffee of the modern B&B. Even the dangling signs of a motoring organisation may beckon you into places of real delight. So how on earth does one choose between them all? That is the question that keeps us on our toes.
